This Creamy Boursin Pastina is simple, comforting, and full of flavor. Tiny acini di pepe cook in broth until tender, then get mixed with Boursin, Parmesan, and butter for a creamy, satisfying bowl. A squeeze of lemon and a little heat from and red pepper flakes bring everything together. It’s quick, cozy, and exactly what you need after a long day.

A bowl of pastina that says "my pastina bowl" is garnished with fresh chives and black pepper.

1 cup acini de pepe

3 - 3.5 cups chicken broth (depending on desired soupiness)

1 tbsp butter

Salt and black pepper, to taste 2 cloves garlic, grated (to taste)

1/2 block of boursin cheese

1/4 tbsp fresh chives, chopped (plus more for garnish)

Freshly grated parmesan, to taste (about 1 cup)

Juice from 1/2 lemon

1/2 tsp red pepper flakes (optional)

  1. Bring the chicken broth, 1/2 tablespoon of butter, and a pinch of salt to a boil. Once boiling, reduce the heat to a simmer.

  2. Add the acini di pepe and stir. Let it simmer for 10–12 minutes, stirring occasionally, until most of the liquid is absorbed and the pasta is tender.

  3. Stir in the grated garlic, Boursin cheese, remaining butter, and Parmesan cheese until smooth and creamy.

  4. Finish with a squeeze of lemon juice, freshly ground black pepper, and red pepper flakes. Taste and adjust the seasoning with salt if needed.

  5. Serve immediately, garnishing with extra Parmesan, fresh chives, a drizzle of your favorite olive oil, and a final squeeze of lemon. Enjoy!

I have made this three times now and it is a WINNER ever time!!! The second and third time I made it, I altered it a bit adding a few more things, but otherwise the rest of the recipe I keep the same. I add finely chopped onions, carrots, and celery, sautéing them together in butter, then adding a bit of broth bringing it to a simmer to soften them before adding in all the broth and the pasta. Also, on one occasion, I wasn't able to find boursin cheese, and was able to easily substitute with a garlic and chives cream cheese -- it tasted just as amazing!!! The other thing I added, to give it some protein is…

This is SO good! I just made it for the first time and am having trouble saving some for my husband when he gets home 😬 If you like Boursin, this is a definite yes! Also very quick, easy, and without much cleanup
