Ingredients:

1 tbsp olive oil

1 yellow onion, diced

6-8 cloves garlic, minced (to taste)

1 tsp red pepper flakes, to taste

1 tsp Italian seasoning

Salt and pepper, to taste

1 tsp smoked paprika, to taste (can sub regular)

1 lb grass-fed ground beef

2-3 tbsp tomato paste

4 cups beef broth

1 cup cream

1 lb medium shells

4 oz freshly shredded sharp cheddar cheese

Fresh chives, to garnish

Ingredients:

1. In a large saute pan (I use misen), heat your olive oil over medium/low heat. Add in your onion, red pepper, Italian seasoning, and a pinch of salt and pepper. Saute for a few minutes. Throw in your garlic and cook for another 30 seconds.

2. Add in your ground beef and season with salt, pepper, and paprika. Break up with a wooden spoon and cook until no longer pink.

3. Once your beef is cooked through, make a small center in the middle of your pan and add in your tomato paste. Let it cook off in the pan for a couple minutes before stirring everything together.

4. Pour in your beef broth and cream, season with a pinch of salt and pepper. Bring to a low boil.

5. Reduce heat to low. Pour in your uncooked pasta and stir. Simmer, uncovered, for 16-17 minutes, or until your pasta is tender.

6. Sprinkle in your cheese, stir, and taste for seasonings.

7. Top with extra cheese and garnish with fresh chives. Enjoy!
