Ingredients:

  • 1 lb chicken (breast or thighs)

    • Seasoned with salt, pepper, onion powder, garlic powder, smoked paprika, and Italian seasoning

  • 2 tbsp sun-dried tomato oil (from the jar), divided (can sub olive oil)

  • 2 tbsp butter, divided

  • 1 large shallot, finely diced (~1 cup)

  • 6–8 garlic cloves, grated or minced

  • Salt and black pepper, to taste

  • 1/2 tsp smoked paprika, to taste

  • 1/2 tsp Italian seasoning

  • 1 tsp Calabrian chilies or red pepper flakes, to taste

  • 3-4 tbsp tomato paste

  • 1/2 cup dry white wine (or chicken broth)

  • 1.5 cups low-sodium chicken broth

  • 1 lb shelf-stable or refrigerated gnocchi

  • 1/2 cup - 1 cup heavy cream or half & half (to taste)

  • 1/2 cup sun-dried tomatoes, julienned (to taste)

  • 1-2 handfuls fresh spinach

  • 1 cup freshly grated Parmesan cheese (plus more for serving)

  • Fresh basil, torn, to taste


Instructions:

  1. In a large skillet, heat 1 tbsp of sun-dried tomato oil and 1 tbsp of butter over medium heat. Add the seasoned chicken and sear until golden and cooked through. Transfer to a plate to rest, then cut into bite-sized pieces and set aside.

  2. Reduce heat to low. Add another 1 tbsp butter and 1 tbsp sun-dried tomato oil. Add the diced shallot and season with salt, pepper, smoked paprika, Italian seasoning, and Calabrian chilies. Cook for 2–3 minutes, then stir in the grated or minced garlic. Cook for another minute until fragrant.

  3. Add the tomato paste and let it cook undisturbed for 1–2 minutes to caramelize. Stir it into the aromatics and cook for another minute until deepened in color.

  4. Deglaze the pan with white wine, scraping up any browned bits, and let it reduce for 1–2 minutes.

  5. Pour in the chicken broth along with a pinch of salt and stir to combine. Add the gnocchi and bring to a gentle simmer. Cook uncovered for 3–5 minutes, stirring frequently, until the gnocchi is tender.

  6. Stir in the cream and let it simmer for another minute to thicken slightly.

  7. Add the cooked chicken and sun-dried tomatoes, stirring to coat.

  8. Fold in the spinach and let it wilt. Finish with Parmesan and freshly torn basil. Taste and adjust seasoning as needed, then serve immediately with extra Parmesan on top. Enjoy!
